hey delish adaptable Korean Sweet potato dish
Rinse potatoes to remove starch.
Heat pan and add olive oil. Add potatoes and garlic and cook until the potatoes look a little translucent, then add the onion. Keep stirring.
Add water, soy sauce, sugar, corn syrup and mix and simmer over medium heat for about 10 minutes until liquid is evaporated. If it needs more water, add some.
When potato is cooked take off stove and add 1 T of sesame oil and a sprinkle of sesame seeds.
2 -3 potatoes, peeled and diced (Korean Sweets)
1⁄2 onion, cut in bite sized pieces
2 garlic cloves, minced or ginger minced
2 1⁄2 tablespoons soy sauce or Braggs alternative soy)
1 tablespoon corn syrup or corn startch
1 tablespoon sugar
1⁄2 cup water
1 -2 tablespoon olive oil or walnut oil to saute
I used 1.5 cups water / braggs / sugar / and corn starch instead of syrup also used minced ginger, and added chopped peppers, green, red, pretty much what was left in my garden and shrooms (baby bok choy would be rock too). cook potatoes for about 12 minutes (half cooked) before you add peppers and shrooms, saute all together as instructions but it came out as big winner! very tasty thought i would share 🙂 can not wait to try the apple muffins!!!
